Wash olivesPut in glass jarsCover with cold water.If using black olives, pour off water every day for three days and replace.If using green olives, pour off water every day for five days and replace. Try not to disturb the olives too much during this process.Add approx 100g of sea salt to 1 litre of water.Bring to boil and cool.Pour over the olives in clean jars leaving ½ inch at the top.Top with olive oil.Seal well.The black olives are ready in three to six weeks while the green olives take two to three months.
