Indulging in a wholesome and satisfying breakfast doesn’t mean you have to choose muffins or lattes. Enter the realm of guilt-free morning delights with Blueberry Bircher Pots and Blueberry Parfait — a dynamic duo to help you fulfil those mid-morning munchies while treating your taste buds to a symphony of flavours and textures.

Blueberry Bircher Pots

Ingredients

1 punnet fresh blueberries

2 small apples or 1 large apple, grated

4 tablespoons plain yoghurt

2 tablespoons chia seeds

¾ cup oats

1 cup milk

¼ cup water

½ teaspoon cinnamon

Mint leaves

Method

In a bowl, combine oats, cinnamon, chia seeds, grated apple, water and milk. Place in fridge overnight or for 3 hours.

Remove from the fridge and mix in the blueberries, leaving 2 tablespoons for topping.

Place the bircher muesli into 2 glasses or bowls and top with blueberries, yoghurt and mint leaves.

Blueberry Parfait

Serves: 2

Preparation: 10 Minutes

Cooking: 5 Minutes

Ingredients

1 cup blueberries

1 cup granola or muesli

1 cup Greek yoghurt

½ cup fresh lite cream, whipped

2 tablespoons honey

Fresh mint

Method

Place ¾ cup of the blueberries into a small saucepan and heat gently for 5 minutes or until the blueberries soften.

Add honey and stir until well mixed. Allow to cool.

Layer the ingredients into 2 glasses or small bowls. Start by adding the softened blueberries, followed by the Greek yoghurt, granola, fresh cream, a layer of the remainder of the blueberries and granola.

Top with remaining granola, blueberries, and fresh mint. Serve immediately.— Courtesy of 5+aDay
