This recipe is the first thing I made with a slow cooker from scratch.
Ingredients
6 | Whole snapper (Main) |
6 | Potatoes |
5 | Carrots |
2 | Onions |
1 kg | Seafood marinara mix |
1 clove | Garlic |
½ bunche | Celery |
2 Tbsp | Turmeric |
2 tsp | Curry paste |
2 dashes | Salt |
Directions
- Steam the snapper heads for 20min Remove as much meat from the head as possible. Set aside for later. Place the 6 snapper frames and the head into a large pot with approx 4 L of water and bring to boil then let it simmer for a few hours.
- Filter the fish stock and place in the slow cooker.
- Dice half the potatoes and half the carrots into cubes. Dice the onions and cut the garlic into small pieces. Pan fry with some oil and add the turmeric powder. With the other halves of potatoes and carrots, grated them.
- Add to the slow cooker the fish head meat, marinara mix, all the Vegas, grated vegetables, chopped celery and curry paste. Let the slow cooker do it's magic for 5 hours (most of the day for the evening meal). Stir occasional and check for consistency. Taste and add salt as desired.
