Jim's Buns

This recipe is an extract from A Good Baking Day by Rural Women New Zealand, published by Random House $36.99.

INGREDIENTS

400g sultanas

Water

225g butter

3 eggs

1/4 cup sugar

2 cups flour

2 heaped tsp baking powder
METHOD

Preheat oven to 180-190C. Cover sultanas with water and boil for 8 minutes. Strain, and add butter. Let butter melt.

Beat eggs with sugar, add sultanas and butter, flour and baking powder. Put in muffin tins. Bake for 15 minutes.
