HAM 'N' EGG MICROWAVE MUFFINS
4 English muffins
1 cup grated tasty cheese
3 eggs
1 teaspoon wholegrain mustard
25g butter, melted
2 spring onions, chopped
8 small slices ham
1/2 cup sour cream
Split the muffins in half. Scoop out some of the bread from the middle of each muffin to form a cavity. Spoon the cheese
into the cavities. Place the muffins in a large, round, shallow microwave-proof dish.
Lightly beat the eggs together with the mustard, butter and spring onions. Spoon over the cheese. Top with the ham. Cover loosely and microwave on high (100 per cent) power for 4 minutes, until just set. Stand for 2 minutes before serving. Serve hot topped with sour cream. Great accompanied by a green salad. - Serves 4
