15 minute meals: Curried Chicken with Five Spice Couscous

1 tablespoon curry powder
1 cup plain yoghurt
salt and freshly ground black pepper to taste
600g skinned and boned chicken breasts
Couscous: 1 cups water
1 tablespoon oil
teaspoon five spice powder
pinch salt
1 cups couscous
In small frying pan over medium heat, stir the curry powder until fragrant and toasted, about 1 minute.
Combine with the yoghurt
and seasonings.
Slice the chicken crosswise into 3cm thick pieces (rounds). Combine with the yoghurt.
Place the chicken in a single layer on a baking-paper lined baking tray. Cook under a preheated grill for about 6-7 minutes, until cooked.
Meanwhile, bring the water, oil and seasonings to the boil. Remove from the heat.
Stir in the couscous. Cover and stand until the water is absorbed. Fluff with a fork and serve with the chicken.
Great served with steamed spinach. -Serves 4.
