This is a simple way to enhance a tray of chicken drumsticks to serve with some roasted potato chunks and a salad.
Use the same marinade for chicken wings as pass-around nibbles.
For 8 drumsticks
1 Make a strong pot of tea using a "smokey" flavoured variety.
2 To each 2 cup measure of tea, add 2 tablespoons of honey, the juice of an orange and a tablespoon of thick soy or oyster sauce. Blend together.
3 Add a cup of water.
4 Layer your drumsticks in a baking tray and pour the mix over them.
5 Place into medium oven and cook for 20-30 minutes, basting occasionally. The liquid should reduce to a sticky glaze.
If the chicken cooks before the glaze forms, remove the drumsticks and keep warm. Put the marinade in a pot and reduce it down until syrupy. Toss the chicken through the syrup and serve.
