With the silly season upon us we are keeping the weeknight meals as easy as pie - a spring chicken and vegetable pie made quick and light with filo pastry and pre-cooked chicken.

Ray McVinnie has 10 more spring wonders for the week-night cook that will hopefully leave you with more time to cook Geoff Scott's party food. His barbecued prawns, beer-glazed pork belly and chilli polenta chips with chipotle mayo make a set of substantial finger food sure to be seen at all the best parties.
