15 Minute Meal: Lamb and Pepper Kebabs

1 small onion, chopped

2 cloves garlic

2 tbsp each: orange juice, soy sauce, cider vinegar, olive oil

1 tsp sugar

500-600g lean lamb leg steaks, cut into 2cm cubes

2 yellow capsicums, seeded

Place onion, garlic, orange juice, soy sauce, cider vinegar, oil and sugar in a food processor.

Mix until smooth.

Place lamb in a plastic bag with marinade. Move lamb around so it is well coated.

Cut yellow capsicums into 2cm squares.

Thread lamb and peppers on skewers.

Brush kebabs with the marinade. Barbecue or grill on medium-high heat for about 6-8 minutes or until the lamb is cooked.

Turn often. - Serves 4
