BACON & AVOCADO BRUSCHETTA
4 rindless bacon rashers
1 avocado
1/2 lemon
1 packet Bruschetta slices
Cook bacon In a frying pan until nice and crisp. Meanwhile scoop the flesh of the avocado into a mixing bowl, add lemon juice and season. Toast bruschetta and spread a good tablespoon of mixture on each. Then top with crispy bacon, a squeeze of lemon and a twist of cracked pepper.
