Rather than another cake or muffin recipe I thought I’d share a couple of ways I like to take advantage of the feijoa season.
My dad always loved to stuff different ingredients under the skin of chicken, one of my favourite combos of his was super finely sliced garlic and sage leaves, it was outstanding. So Dad is my inspiration for this dish and of course I have to mix it up bit — this time with feijoa, onion and chilli.
Feijoa stuffed chicken thighs with a feijoa, chilli and lime salad
Borlotti and potato puree
Serve this mash with the chicken thighs and salad above.
Feijoa superfood smoothie
This is just goodness in a glass. Feijoas are loaded with vitamins and antioxidants so add in a few more superfoods and you’ll be bouncing out of your skin and warding off the seasonal colds. Top tip, when there is an abundance of feijoas I like to freeze some, this makes the feijoa smoothie season last longer and you don’t have to use ice.
