Add some fresh salad and serve with a side of chips for a filling winter meal.

A great meal for a cold night

Ingredients:

500g lean minced beef

1/2 small green capsicum, finely diced

1 small onion, finely diced

1-2 tsp diced chilli

1 small egg, lightly beaten

2 tbsp chopped coriander

60g tasty cheddar cheese, sliced into 4 equal portions

2 tbsp canola oil

Method:

Combine beef with capsicum, onion, chilli, egg and coriander. Form into 8 patties.

Place cheese on top of 4 patties and cover with remaining ones. Pinch edges together well. Brush with oil.

Pan-fry or grill for 4 minutes each side, until cooked.

Serve between halved, lightly toasted burger buns, together with lettuce and tomato salsa. - Serves 4.
