Ingredients:

1 medium onion, diced

25g butter

2 cloves garlic, crushed

200g button mushrooms, sliced

3 cups sliced green beans

2 cups chicken stock

420g can cream of mushroom soup

1 cup each: toasted croutons, grated tasty Cheddar cheese

Method

Saute the onion in the butter until softened but not brown. Add the garlic and mushrooms and cook, until softened.

Meanwhile, boil the green beans in chicken stock for about 8 minutes, until cooked. Drain reserving 3/4 of a cup of the stock. Combine with the mushroom soup. Add with the beans to the onion mixture. Stir well. Pour into a greased baking dish.

Cover and microwave on high power for 4-5 minutes, until hot. Sprinkle with the croutons and cheese. Grill until the cheese is melted.- Serves 4
