BRAISED PEAS AND LETTUCE
Serves 6
50g butter
1 onion, finely diced
550g fresh or frozen peas
6 lettuce leaves, sliced
70ml chicken stock
Sea salt and freshly ground black pepper
1 Tbsp caster sugar
1. In a heavy based saucepan, melt the butter over a low heat. Add the onion
2. Cover the pan and simmer the vegetables gently for three minutes. Add sugar, replace the lid and simmer for another three minutes. Turn into a heated vegetable dish and serve immediately.
