I think we all love pancakes.

6 to 8 (with couple left over)

2 cups all-purpose flour

1 cups self raising flour

2 tablepoons baking powder

1 pinch of salt

2 tablespoons of almonds (or more)

NO SUGAR

1 ¼ cups coconut milk

3 eggs

4 tablespoons butter, melted

1 teaspoon of vanilla extract

1 teaspoon of lemon zest

In a large bowl, sift together the flour, baking powder, salt and almonds.

Make a well in the centre and pour in the milk, egg vanilla extract, lemon zest and melted butter; mix until smooth.

Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately ¼ cup for each pancake. Brown on both sides and serve hot.

Well enjoyed as brunch after a morning workout at the gym . . . best way to get you started for the Sunday chores.
