Nan’s yummy German chocolate cake

Nan says she’s made this cake many times and it’s always a hit with everyone . . . especially the icing.

German chocolate cake . . . with decadent icingINGREDIENTS:

2 cups sugar

4 eggs

1 cup yoghurt

200g soft butter

2 level tsp baking soda

3 cups self raising flour

½ tsp salt

¾ cup cocoa

2 tsp coffee dissolved in 1 cup hot water

1½ tsp vanilla essence

METHOD:

• Put all ingredients in a large bowl and beat for about 2-3 minutes until smooth and combined.

• Put into a greased 24cm round cake tin and bake in moderate oven for one hour or until cooked.

Icing:

1 cup evaporated milk

3 egg yolks (only)

1 cup sugar

¼ lb butter

1 tsp vanilla essence

1½ - 2 cups coconut

METHOD:

Combine all ingredients except the coconut in pot over med heat.Stir until thick.Remove from heat and stir in coconut.Leave to cool — then ice cake.— Recipe makes one large cake
