Nan’s ravishing rhubarb relish.

Can you believe it’s only three months until Christmas? Never fear, Nan is here with a great recipe for rhubarb relish. We hope your family enjoys this traditional favourite. Let the countdown to the holidays begin!

This rhubarb relish does not last long at Nan’s house so she tends to double the recipe.

“I have made this when rhubarb is aplenty. I have never been able to keep up with my supply as it is a definite favourite with everyone,” says Nan.

“It’s lovely with sausages and any meats, also on crackers with cheese.

Even the kids love it. I have also given it away as Christmas gifts in lovely little jars with a ribbon.”

INGREDIENTS:

2 cups chopped rhubarb2 cups chopped onion1 cup vinegar2 cups brown sugar½ tsp salt, cinnamon, ginger and a pinch of cayenne.

METHOD:

Place all the above in a pot and bring to the boil.Simmer for 20-30 minutes or until it resembles jam consistency.Bottle and seal.
