Mary’s marvellous muffins

Mary is famous for her feijoa muffins (above) and feijoa cake. Pictures supplied

75g melted butter

1 cup feijoa pulp

2 big eggs

¾ cup sugar

2 cups SR flour

¼ cup orange juice

Grated orange rind

1 tsp cinnamon

• Heat oven to 175 degrees and butter muffin tins.

• Mix wet ingredients into dry.

• Spoon into the muffin tins.

• Sprinkle with 1 tsp of cinnamon mixed with 1 tbsp of sugar.

• Cook until browned.
