1¼ cups all-purpose flour

1 tbsp cornflour

½ tsp baking soda

½ cup chocolate chips

Sea salt

Method

Add the butter to a pan over medium heat and allow the butter to turn brown gently. Once it starts getting a little foamy, add in the vanilla and continue cooking until the butter has completely browned. Transfer to a bowl and let it cool slightly.

In a separate bowl, add in the flour, cornflour and baking soda. Mix well.

To the bowl of brown butter, add both white and brown sugar and whisk for 2-3 minutes.

Now add the egg and the extra yolk. Whisk until fully combined and the mixture has become light and fluffy.

Add the dry ingredients and, using a spatula, bring the cookie dough together.

Add the chocolate chips and fold them well.

Take evenly-sized portions of the cookie dough and place them on a tray lined with parchment paper. Ensure that there is enough space between each ball of dough.

Refrigerate the cookie dough overnight.

Next morning bake it in a preheated oven at 180C for about 10-12 minutes.

Once fully baked, take the cookie tray and tap it on the kitchen bench to develop cracks, and sprinkle with some sea salt. Allow it to cool and then pack it in a nice airtight container and gift it to your friend.
