Serves 4
• 1 425g can tuna in oil
• 2 sticks celery, finely diced
• 4 cups of cooked brown rice
• 3 tbsp soy sauce
• Juice and zest of half a lemon
• Finely chopped parsley
1. Toss all the ingredients together except the lemon juice and tuna.
2. Drain the tuna, keeping the oil, mix this with the lemon juice and blend.

3. Place the tuna chunks on top of the the rice mix.
4. Pour over the tuna oil and lemon dressing.
