Today, many butchers are skilled in the old crafts of brining, curing, smoking and pickling meats. This charcuterie craft has greatly expanded their offerings, as each butcher creates a unique product with a personal twist. 1. Arrange smoked salmon, slices of chorizo (the cooked version, obviously) and bresaola.
2. Make up a horseradish cream: mix equal quantities of sour cream and prepared horseradish cream, add a squeeze of lemon juice and mix well.
Serve with some crusty bread (toasted, if you prefer), wedges of lemon and some crunchy greens such as lettuce, gerkhins or cornichon.
