Makes approximately 1 litre

1 kg pears
Finely grated zest of two oranges
3/4 cups water
1/2 cup lemon juice
2 1/2 cups brown sugar

1 Peel the pears then quarter, remove the cores then dice.

2 Put into a large saucepan with the orange zest, water, lemon juice and sugar.

3 Bring to a simmer while stirring, then boil rapidly for 20 minutes. Stir occasionally to ensure the fruit hasn't stuck on the bottom of the saucepan.

4 Pour the jam into warm sterilised jars then seal while still hot.
