More than just Chinese chicken or pork and cashews, try them in an Indian-style rice pilaf. Soften cumin, garlic, ginger and onions, add coriander, mint leaves, minced chillies, raisins, then stir in rice with enough liquid and cook until done. Top with cashew nuts for a great vegetarian lunch.
A blended mix of equal parts raw cashew nuts and water makes a great cream substitute for soups and curries. Try it with lentil, chilli, coconut and lime soup or a "meaty" mushroom and vegetable bisque.
