Roasted pumpkin and kumara salad
Roast plenty for leftovers and toss as a salad with a balsamic/olive oil viniagrette (or use orange juice, olive oil and a dash of curry powder). Add pumpkin seeds or pine nuts, crumbled feta or drained canned chickpeas for a more substantial meal.
Lentil and kumara curry
Simmer kumaras with your favourite dahl recipe for a warming, substantial meal with rice. Pulse roughly to make a healthy dip with crackers or wrap into filo pastry for a kind of samosa, served with chutney.
Substitute kumara for pumpkin in a sweet American dessert. Add orange juice or brandy, play with the balance of cinnamon, ginger and nutmeg and decorate with candied pecan nuts.
