Makes approximately 30
60g butter
¾ cup water
½ tsp salt
125g plain flour
3 eggs
60g tallegio, cut into small pieces
Freshly ground black pepper
1 Preheat oven to 200C. Combine the butter, water and salt in a saucepan. Bring to a boil then remove from the heat.
2 Add the flour and stir then return to the heat and stir over a medium heat for 2-3 minutes or until the mixture begins to dry out and leave the sides of the saucepan.
3 Now you can either transfer the mix to a food processor and beat in the eggs one at a time, or do by hand.
4 Add the cheese and the pepper, then drop in teaspoonfuls (or use a piping bag) on to a lined baking tray and bake for 10 minutes. Turn the oven down to 180C and continue baking for 20-25 minutes or until puffy and golden.
