Serves 4
• 3 oranges, segments separated
• ¼ red cabbage, shredded
• ¼ green cabbage, shredded
• 1 bulb fennel, finely shaved
• 1 large carrot, grated
• 1 spring onion, thinly sliced
• 2 Tbsp sesame seeds, toasted
• 2 Tbsp chopped parsley
• Salt and pepper, to taste\
Dressing
• 2 Tbsp olive oil
• 1 tsp Dijon mustard
• 1 Tbsp white vinegar
• 1 Tbsp brown sugar
1. Combine the oranges, cabbages, fennel, carrot, spring onion, sesame seeds and parsley in a large bowl.
2. Place all of the dressing ingredients in a small jar and shake to mix.
