To the creaminess of chopped ripe avocados and cooked prawns add the Asian-style tang of grapefruit or oranges, dressed with chilli, lime and coriander dressing (use a peppery extra virgin olive oil to continue the theme).

Summer green
Add a green twist to the classic tomato/mozarella/basil caprese salad: sliced avocados on the layers, drizzled with avocado oil for a creamy summer treat.

Xmas theme
Line up the classic holiday colours for dinner on Christmas day: cubed avocado, watermelon (de-seeded) and feta cheese, piled on a plate with a light dressing (toasted pine nuts are a nod to the tree). This light entree leaves room for the turkey, ham and trimmings.
