Like the ham, this is another dish that will last beyond Father's Day. Men love raiding the fridge to find something to put in a samo at any given moment. Make a meat loaf, wrap it up and make it look like a gourmet gift.

This simple recipe comes from the New Zealand classic Edmond's Cookery Book (1997 edition) but has a few add ins.

500g mince
500g sausage meat, or buy 500g gourmet sausage and remove the meat from the
1 onion, finely chopped
2 eggs
half a cup of chopped parsley
2 Tbsp grain mustard
2 tsp dried herbs, a mix of thyme, oregano and basil

1 Mix all the ingredients together in a bowl with your hands.

2 Line a loaf tin with tin foil, leaving enough foil at the edges to cover the top.

3 Press the contents into the tin and wrap the foil over the top to cover.

4 Cook in a preheated medium oven for 40 mins. Pull back the foil and spread tomato sauce and breadcrumbs over the top. Cook for another 10-15 minutes.

5 Allow to cool and refrigerate before slicing, serving with a salad or just making a Man Sandwich with lettuce, tinned beetroot, sliced tasty cheese, mayo, mustard and chutney.
