SOUR CREAM QUICHE

(Serves 4-6)

1 sheet puffed pastry

3 eggs

300ml sour cream

100g bacon, diced

Preheat oven to 180C. Place a sheet of puffed pastry on a quiche dish lined with baking paper. Beat eggs and sour cream. Pour over chosen filling. To taste, add sea salt and pepper and bake for 30 minutes or until set.

Optional: Add a drop of tomato and Worcestershire sauces to the egg mix for extra flavour. Bacon can be substituted with corn kernels, asparagus, baby spinach, semi-dried tomatoes or chicken.
