1/2 cup caster sugar
Juice and finely grated rind of 1 orange
1/2 cup oil
1/4 tsp salt
1/2 cup yoghurt
1 cup self-raising flour
3/4 cup chocolate chips
ICING: 2 cups icing sugar, 25g butter, melted, 3 tbsp orange juice, 2 tsp grated orange rind

Set oven to 180C. Mix sugar, orange rind and egg until pale and creamy. Add oil, salt, yoghurt and orange juice, then mix well. Gently mix in flour and chocolate chips.
Spoon mixture into 12 muffin cups and bake for 15 minutes until springy on top.
Mix together icing sugar, melted butter, orange juice and rind and mix well to make a smooth icing.
Spread icing over cooled cupcakes and sprinkle with chocolate chips.
