Mix this syrup with soda water to make a refreshing sparkling drink.
|750 g||Rhubarb, roughly chopped (Main)|
|1 ½ cups||Sugar|
|3 cups||Water, cold|
|⅓ cup||Lemon juice, or to taste|
|3 tsp||Rosewater (Main)|

- Place rhubarb, sugar and finely grated lemon rind in a saucepan with the water. Bring to the boil and then simmer for 15 minutes. Allow to cool completely.
- Strain syrup into a jug and add lemon juice and rosewater to taste.
- Transfer syrup into a bottle, seal and store in the fridge. Dilute syrup to serve.
