|1 tsp||Crushed chilli|
|2 tsp||Crushed ginger|
|1 to taste||Salt & freshly ground pepper|

- Scrub mussels. Place in the microwave and cook on high power for one to two minutes.
- Place in a dry frypan over medium heat until mussels just open. Discard any mussels that do not open.
- Remove top shell from mussels. Mix coconut, chilli, ginger, lime rind, lime juice and pepper together.
- Divide mixture over the top of mussels. Place mussels on a baking tray and grill until golden. Serve immediately.
