Fresh and simple, this rocket mayonnaise adds a lovely creamy dressing to steak.
Rocket Mayonnaise
2 | Eggs |
½ tsp | Salt |
2 Tbsp | White wine vinegar |
¼ cup | Olive oil |
¼ cup | Vegetable oil |
1 cup | Rocket (Main) |
Steaks
4 pieces | Beef steaks (Main) |
1 to drizzle | Olive oil |
1 to taste | Salt & freshly ground pepper |

- Place egg yolks, salt and vinegar in the bowl of a food processor. Process or whisk until pale and foamy - alternatively, blend in a bowl with a whisk or hand-held electric beater.
- With the motor running, or while continuously whisking, add oils in a thin and steady stream until combined. Add rocket leaves and process or whisk to incorporate.
- Heat a large frying pan or char-grill pan over a high heat until it's very hot. Spray steaks with a film of oil and season all over with salt and pepper.
- Add steaks to pan and cook for 2 to 3 minutes (depending on thickness of steaks), turn once and cook for 2 to 3 minutes on the other side for medium-rare, or longer if you prefer your meat well cooked. Serve drizzled with rocket mayonnaise.
