Farfalle is bow-tie pasta, this dinner or lunch is delcious.
Ingredients:
2 cups dried bow-tie (farfalle) pasta
2 shallots, chopped
25g butter
1/2 cup white wine
3/4 cup cream
150g smoked salmon, chopped
salt and white pepper to taste
2 tbsp chopped parsley
Method:
Bring a large saucepan of water to the boil, add the pasta and cook, until just tender.
Meanwhile, saute the shallots in the butter in a non-stick pan. Add the wine and cook, until almost evaporated.
Add the cream and simmer for 2 minutes. Add the smoked salmon and heat through.
Drain the pasta and add to the salmon mixture. Season. Serve topped with parsley. --Serves 4.
