You could compare the idea to producing a single malt scotch, instead this is a single hop beer.
Epic Brewing Company's Equinox is part of the brewer's "One Trick Pony" range, named after a fellow beer reviewer and writer who said the brewery was just a "one trick pony".
Instead of getting angry, the guys at Epic decided to own it and produced a range of single hop IPAs using US hop varieties, including Zythos, Comet and Mosaic.
Incidentally, this was one of the nicest smelling beers that has passed through my nasal cavity.
It pours a dark amber colour, which leads you to think there may be quite a bit of malt in the brew, but it doesn't taste overly malty.
It's not too common to have a beer that's brewed from a single hop variety, many brewers use three or four to balance the flavours, so this was a bit unusual.
Very fruity and tropical, with pineapple and citrus zesty flavours, it does have a little bitter kick and a tangy sharp finish.
It might be a little bit sweet for lovers of traditional IPAs but it certainly did not let itself down in the flavour department.
Okay, it's not their best work (when compared with their majestic Armageddon) but it's pretty darn good all the same.
I suggest you get your hands on a few of their single hop beers and find out what your favourite hop variety is - beer homework. Awesome.
