Makes 12 depending on size
1 1/2 cups fresh corn kernels
1 cup mussel meat, chopped
1/2 cup plain flour
Salt and black pepper
2 tsp fresh chilli, finely chopped
1 egg, separated
1 Tbs parsley, finely chopped
1 Tbs butter, melted
1 cup milk, approximately
Vegetable oil for frying
Avocado and lemon to serve
1 Combine the corn, mussel meat, flour, seasoning and chilli in a bowl.
2 Make a well in the centre and add the lightly whisked egg yolk with the parsley and butter.
3 Pour in the milk and gently mix. Whisk the egg white then fold into the mixture.
4 Heat a fry pan and lightly oil then add spoonfuls and fry until golden. Turn over and repeat.
