Recipe: Chinese duck pancakes

Buying a ready-cooked duck from a Chinese market can make for easy entertaining. It is also economical and you will get a product that is almost impossible to replicate in the home kitchen. These ducks are cooked hanging in the oven and basted with delicious marinades. Along with the duck, buy some duck pancakes. Again, you will never be able to make these as perfectly unless you were born to it. Buy a jar of hoisin sauce and pick up a cucumber and a bunch of spring onions.

The simplest way to serve is to shred the duck off the bone and put into a serving bowl.

Finely slice the cucumber and spring onions into long pieces and put these into bowls.

Put out a bowl of hoisin.

Now stand back and let your friends make their own pancakes.

Tell them to put a few bits of spring onion, cucumber and duck down the centre of the pancake, dab on some hoisin and roll up .

I promise these will be a hit!

JB, there used to be a couple who used to make/sell them fresh at Tai Ping Dominion Road but not any more.

A good alternative is in the frozen section there - look for packets of Spring Roll skins that also says "Popiah Skin" or "Kulit Popiah". If you're feeling adventurous, why not try making them: http:/www.houseofannie.com/homemade-popiah-skins/ Definitely will be a lot of challenging fun!

This isn't a recipe. Try roasting the duck yourself and making your own pancakes. Also try making a flavourful plum sauce yourself. Not so simple now.
