Recipe: Raisin loaf

1 cup milk
3 tbsp golden syrup
2 cups flour
3 tsp baking powder
Pinch salt
¾ cup sugar
1 cup raisins

1 Preheat the oven to 180C. Position oven rack in middle of oven.

2 Line the base of an 8x18 centimetre loaf tin and lightly grease.

3 Warm the milk and syrup to just combine.

4 Sift the flour, baking powder and salt into a bowl and stir in the sugar and raisins.

5 Stir the cool milk mixture into the flour to combine well.

6 Turn into prepared tin.

7 Bake at 180C for about 1 hour.

8 Allow to cool in the tin for about 10 minutes before removing to a wire rack to cool completely.

The loaf is cooked when it looks well risen, set and well coloured. Test by putting a fine skewer into the centre of the loaf. It will come out clean when cooked.

Mum made a similar loaf, but always put prunes in for extra moisture.
