Take a page out of every chic caterers' menu. Use small cookie cutters to cut a standard pattie into three mini burgers, grill and serve on mini buns with a good relish, micro greens and a tiny cornichon.
For a healthier version of burgers 'n buns, layer up patties on an open-top sandwich: thick cut wholegrain bread, slathered with mashed avocado (instead of mayo), a patty, good mustard and tomato relish. And plenty of napkins to clean up.
Break up cooked leftover patties, gently fry with onions and garlic, add a jar of good tomato passata sauce and layer with lasagne sheets and cottage cheese, topped with grated cheese for a fast cheat's lasagne.
