Recipe: Avocado waffles with chilli and lemon

Serves 4

Waffle mix
2 eggs
2 cups milk
1 3/4 cups self raising flour
1/2 cup cornflour
1/2 tsp salt
4 Tbs butter, melted

2 avocados
3 lemons
1 Tbs olive oil
4 free range eggs
4 tsp chilli sauce
Bacon, smoked salmon or grilled chorizo
Sour cream
Freshly ground pepper

1 To make the waffles; beat the eggs well then whisk in the milk, flour, cornflour, salt and melted butter until smooth.

2 Pour into hot waffle irons.

3 Slice the avocados and squeeze over the juice of 1 lemon.

4 Heat the olive oil and fry the eggs. Spoon over the chilli sauce before layering between the waffles with the avocado.

5 Add bacon, smoked salmon or grilled chorizo with a sprinkling of pepper. Offer sour cream and wedges of lemon.
