3 ways with ... Lemon curd

Summer stack
After a bumper lemon season, your shelves should be full of the creamy lemony spread. Make a stack of thin crepes, plump American-style pancakes or wafer biscuits with curd and sliced new-season berries, dredged with icing sugar of course.

Semi-healthy
For an instant sweet gratification, stir into a thick, Greek-style yoghurt and add crushed biscuits (amaretti are good). Or mix with an equal quantity of whipped cream, berries and crushed meringues for a lemony Eton Mess.

Don't trifle with me baby
Whip up individual baby trifles for Christmas dinner - or a sneak preview, now. Soak ladyfinger biscuits in sherry (or orange juice), layer with lemon curd, whipped cream and fresh berries (or stewed apricots from the pantry).
