Substitute mandarins for lemons for a sweet, orangey curd for toast spreads, curd tarts and sponge cake filling. Fabulous in cheesecake too, or caramelise mandarin slices on chocolate cakes and tarts.
Eat your greens
Toss mandarin segments through winter salad greens like baby spinach with a red wine vinaigrette. Or stir through steamed broccoli or brussels sprouts, with slivered almonds and a dab of butter.
