Winter vegetable and shallot soups
Add roast shallots and butternut pumpkin to chicken stock, and serve with a dollop of sour cream and chives. Or simmer shallots and spinach in chicken or miso stock (a dash of ginger is good too).

Warm salads
Roasted shallots with boiled or roasted baby beetroots and garlic make a good winter salad tossed with spinach and walnuts.

Shallot sauces with seafood
A citrusy vinaigrette made with minced shallot, white wine vinegar and orange juice is a great sauce over tuna or poached salmon.
