Pumpkin and goat's cheese pizza

Makes 4

3 red onions, sliced
1kg butternut pumpkin, peeled and chopped
3 tsp chilli flakes
1 tsp sea salt flakes
2 Tbsp olive oil
1 quantity basic pizza dough
1 quantity pizza sauce
2 cups grated mozzarella
300g goat's cheese, crumbled
50g rocket leaves, to serve

1 Preheat oven to 200C. Place the onion, pumpkin, chilli, salt and oil on a baking tray and toss to coat. Roast for 25 minutes or until golden. Increase the temperature to 220C.

2 Prepare 1 quantity basic pizza dough. Divide dough into quarters and roll out on a lightly floured surface to make 22cm round bases. Place bases on baking trays lined with non-stick baking paper.

3 Divide the pizza sauce, mozzarella, pumpkin mixture and goat's cheese between the bases and bake for 10-15 minutes or until the topping is golden and the base crispy. Top pizzas with rocket to serve.
