If you can make good coffee you have a ticket to the world.
That's the view of Dave Clapperton, barista coffee teacher from Palmerston North.
He points out his niece from New Zealand living in Paris making coffee, not far from the Eiffel Tower, as an example.
He was on a two-day visit to Dannevirke's Totara College to teach junior students how to make top coffee. He came with two machines, lots of milk, bags of coffee beans and heaps of enthusiasm.
Dave has a lot of experience making top coffee. Last year he was a judge at the World Barista Championships in Melbourne.
His secret to coffee perfection?
Buy the best beans and have them freshly roasted and sealed just a day before use.
He was imparting his knowledge to Totara College Year 9 and 10 students. For them there were two Level Two NCEA credits once they had mastered the theory and practice of making espresso and plunger coffee.
Meanwhile, the other seniors were earning 5-7 Level Two credits with their teacher Steve Anderson learning about being a day skipper. This takes the students through an accredited Coast Guard Boating Course.
