15 Minute Meal: Slaw Burgers

Freshly ground salt and black pepper to taste

400g lean minced pork

1 tbsp rice bran oil

4 baps, halved

3-4 cups coleslaw

1/2 cup coleslaw dressing

1 avocado, stoned, peeled and sliced

1 lemon

Season mince then form into four equal patties, about the same diameter as the baps. Pan-fry patties in oil on medium heat for about 3-4 minutes each side, until cooked.

Meanwhile, toast baps and combine slaw with dressing. Top the toasted bap bases with slaw, patties and lastly the avocado. Drizzle with lemon juice. Cover with bap tops. - Serves 4.
