8 beef or pork sausages
2 tsp canola oil
1 large onion, thinly sliced
250g mushrooms, thinly sliced

1/4 cup chopped parsley
1 cup light sour cream
Grill the sausages under medium-high heat until lightly browned and just cooked through, about 5 minutes each side.
Meanwhile, heat the oil in a frying pan. Add the onion and mushrooms and cook until soft. Thickly slice the sausages and add to the pan. Sprinkle in the parsley and stir in the sour cream. Heat through gently. Perfect with rice or pasta. - Serves 4.
