I am not sure I have ever been more tempted by an apple than by those on the cover of today's Bite. These stuffed apple crumbles are the work of a genius. That genius is Allyson Gofton and all she has done is stuff her ruby-reds with biscuit crumbs, pop their wee tops back on and bake them.
If you want to get busy, Allyson has provided a recipe for the speculaa biscuits she has stuffed them with but, for me, that's not the idea. This is a quick fruit-based dessert and we all know we need to add more fruit to our diet.
Speaking of diets, I am really not sure what to make of Aaron Brunet's teggfu. I guess I like my eggs too much, but I do know a few people who can't stomach them and those choosing to follow a plant-based diet will probably be all over this recipe. Peter Gordon is also on eggs - those that turn green in the pan - which is also turning my tummy a little, but eggs that are green thanks to the addition of spinach is another matter entirely.
