The Country Early Edition's Dom George caught up with two very talented chefs from Dunedin's Vault 21 who are off to the NZChefs National Salon in Auckland this month.
Sous Chef Chris Moore and Commis Chef Fifi Leong have both been given the wild card entry to the event after showing great skill in the Otago/Southland regional held in Cromwell.
Vault 21 are famous in New Zealand for having locusts on their menu which Chris and Fifi still serve up. They divulge a few of their secrets on the art of preparing the insects to a fascinated and slightly perturbed Dom.
Finally, the boss is sitting in on the interview so Dom takes the opportunity to ask Chris and Fifi what they think of working at Vault 21. Cheeky...
