Serves 12

500g strawberries, sliced
500g blueberries
500g raspberries
200ml Pimms
1/2 cup caster sugar
1 cup freshly squeezed orange juice, strained
1/2 cup fresh mint leaves, shredded
Softly whipped cream, to serve

1 Combine the berries in a bowl.

2 In a second bowl, stir together the Pimms, caster sugar and orange juice until the sugar has dissolved. Pour over the berries and leave at room temperature for 30 minutes. Add the mint.

3 To serve; spoon the berries and liquid into small glasses, top with a little whipped cream and serve with elegant spoons.
